{"id":639,"date":"2017-09-25T21:39:46","date_gmt":"2017-09-25T21:39:46","guid":{"rendered":"https:\/\/twiceifilikeit.com\/?p=639"},"modified":"2017-12-25T21:40:05","modified_gmt":"2017-12-25T21:40:05","slug":"triple-ginger-cookie","status":"publish","type":"post","link":"https:\/\/twiceifilikeit.com\/?p=639","title":{"rendered":"Triple Ginger Cookie"},"content":{"rendered":"<p><em>Recipe by Canyon Ranch<\/em><\/p>\n<p><strong>This cookie provides just the right chewy, spicy, molasses tang \u2013 and you\u2019d never guess they\u2019re only 80 calories per cookie!<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span><\/p>\n<p>\u2153 cup unsalted butter<br \/>\n\u2154 cup low-fat cream cheese<br \/>\n1\u00bd cups brown sugar<br \/>\n1 egg yolk<br \/>\n\u2153 cup black strap molasses<br \/>\n1\u00bd cups all-purpose flour<br \/>\n\u00be cup whole-wheat flour<br \/>\n\u00bd tsp ground ginger<br \/>\n1\u00bd tsp baking soda<br \/>\n\u00bc tsp sea salt<br \/>\n2 Tbsp peeled and minced fresh ginger root<br \/>\n\u00bd cup minced crystallized ginger<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Instructions<\/strong><\/span><\/p>\n<ol>\n<li>Preheat oven to 350F. Lightly coat a baking sheet with canola oil spray.<\/li>\n<li>In a large mixing bowl, cream butter, cream cheese and sugar on low speed with an electric mixer. Add egg yolk and molasses and mix on low until just combined.<\/li>\n<li>In a large bowl, combine dry ingredients. Add to butter mixture and mix on low for 10 to 20 seconds. Add fresh ginger and crystallized ginger. Mix briefly by hand. Portion heaping teaspoonfuls (or use a \u00be ounce scoop) onto baking sheet about 1\u00bd inches apart. Bake for 7 minutes.
