Dust with\ncake flour, tap around the edges to coat, and toss excess by tapping each pan\nupside down over the trash.<\/li><li>To prepare the cake, pulse the sugar and orange\npeel in a food processor until peel is finely chopped and resembles the texture\nof wet sand. <\/li><li>Beat together butter and orange\/sugar mixture with\nhand mixer in an extra-large bowl until light and fluffy. Add eggs, one at a\ntime, beating after each addition.<\/li><li>Whisk together remaining dry ingredients (cake flour,\nbaking soda, and salt) in a separate bowl. Stir together orange juice and milk\nin a large measuring cup or bowl. Add flour mixture to butter mixture alternately\nwith milk mixture. Beat on low speed just until combined, scraping down sides\nas needed. <\/li><li>Pour batter evenly among prepared cake pans, and\nbake in preheated oven until a wooden pick inserted into cake comes out clean,\ntest with a toothpick after 30 minutes. Cool cake in pans on a wire rack and\nmove cakes carefully to a wire rack to cool completely. Brush each cake lightly\nwith Aperol.<\/li><li>To prepare the frosting, beat together powdered\nsugar and butter in a large bowl using a hand mixer, until light and fluffy.\nAdd orange juice, Aperol, and 10 drops of each food coloring. Beat until smooth\nand continue adding drops of each food coloring until desired color is attained.\n<\/li><li>To assemble the cake, move sturdiest cake to a\ncake stand or flat platter. Spread one cup of frosting on top of the base cake\nlayer, and spread to the edges of the cake. Top with second cake layer, and\nrepeat process, to stack each layer you have baked and brushed. Top with final\ncake layer with frosting, and spread frosting on top and sides of cake until\nsmooth and fully frosted.
