Buffalo Chicken Dip. It sounds kind of gross, right? Turns out it is one of the greatest things I have ever mastered. There are a number of variations on the recipe available online, but I took inspiration from a few to create this bubbling, melty dish of deliciousness. The trick is layering the dip, rather than mixing it all together (which results in a rather unattractive goop) so that the top layer is a lustrous toasted cheese that seals it all together. With a creamy base, perfectly seasoned chicken, and a striking blend of cheeses, this appetizer delivers on all fronts as a crowd pleaser. Kick back, relax, and enter cheese lover’s paradise.
Ingredients:
- 8 ounces light cream cheese, softened
- ½ cup light blue cheese or ranch dressing
- ½ cup hot sauce
- ½ cup buffalo wing sauce
- ¾ cup crumbled blue cheese
- ½ cup shredded sharp cheddar
- 2 cups shredded chicken (I used rotisserie)
- Salt and pepper
Preparation:
Heat oven to 350 F. Spread cream cheese into base of deep baking dish.
Season shredded chicken and mix with hot sauce and wing sauce, let sit for 20-30 minutes.
Mix dressing, hot sauce and blue cheese together with chicken and spread over cream cheese. Layer top with shredded cheddar.
Bake 20 minutes or until mixture is heated through; stir. Garnish as desired. Serve with crackers or crudités.
